Hello!
The plugin works well, but although in the list of categories they all appear, when they have to be shown it tells me that there are no results and those categories have products

Can you give us your site URL? We need to check it on your site first.
For the product masonry, when you enable the All category and the product loading for the first time, example 4. It only loading 4 items for all the product categories, not the 4 items for each category. That is the reason some category doesn't have the product.
You can check the product's tabs demo, http://demo.yolotheme.com/plugins/products_layouts_e/products-tab/ it only loads the products for the first category.
Please check it again.

The plugin is not loading all categories correctly if you choose product masonry and data settings>Show/Hide "All" Title
if i disable the Show/Hide "All" Title option, it is working as intended.

I have created 15 products for testing purposes divided into 3 categories.
5 mugs, 4 men, 6 women.
Yes, As I said, the product per category option doesn't use when enabling the "Show/Hide "All" Title" options.
That is a reason when you enable that config.

Check the link again and the screenshot below, it is only showing 3 products out of 4 in the men tab category and no products all all when you click on the mugs tab when there is 5 products in this category.
So you are telling me that this is the normal behaviour?

As I said, when you show the All filter on the products masonry layout, it only gets totals products from 3 categories as your selected. It doesn't get the products per category config. And it also relates to your order config.
Please check it again.
