Hi,
I've been working with Visual Composer on many projects and it seems to me that mobile view did retain desktop view layout settings.
Please go to https://alexgauvin.com/capricesdelectables.com and have a look on full desktop view and resize to mobile view. IMO, it should retain margins between content rows and blocks ?? I'm not sure how to set that correctly without tweaking out CSS.
It seems to me that the margins should be the same, no matter the view ?

I have checked your site and found the issue with your custom CSS.
It make your margin: 40px 60px 30px 60px for all your device (max-width: 1299px) has this CSS.
Please add the custom CSS to reduce this margin option.

I have a similar problem. I want to make my home page to show at least two products at a time when using a mobile. Currently it is on 1.

You can configure in Column of Visual Composer shortcode to display as you want.
For example, we have 3 Yolo Banner shortcode in one row. Please go to each shortcode > Column Settings > Responsive Options > configure as this image: http://prntscr.com/gh72eb
