To use the plug-ins for the Single Product Page(normally, plugins will use hooks) -> You have to use the Single Product Default Layout instead of Product Block.

To Subtitle can work, you have to use Single Product Default Layout instead of Product Block.
With Product Block: We use "Functions" instead of "Hooks" to separate the fields (title, price, rating, description ...) into separate "the shortcode". -> Subtitle (use Hook) will not work.

I have checked the plugin "Woocommerce Product Subtitle" on our site.
- The Subtitle still normal works on the "Cart Page, Checkout Page, Order View Page, Single product".
- With the Shop Page: you set the "Title position" is "Product Rating" instead of "Product Title". (we don't use this hook "'woocommerce_shop_loop_item_title'").

It seems you have to use the lazy load image, you can try to disable it and check again or try with the thumbnail type "Packery".
If you use the Lazy load -> The image will be delayed to load -> Isotope will not work correctly -> Image overlapping on each other.
